Prawn and Macadamia Salad


500 gram prawns, peeled
2 cloves garlic
Grated zest and juice of one lemon
2 TB olive or macadamia oil
Salt and freshly ground pepper


½ cup roasted macadamias
200 gram cherry tomatoes
1 large avocado
1 cup mixed baby salad greens macadamia and Lime Infused oil



  1. Mix prawns with garlic, zest, pepper and salt.
  2. Marinate in fridge for at least 10 minutes.
  3. Heat 1 TB oil over medium – high heat.
  4. Add prawns and toss occasionally until pink and lightly caramelised, about 3 minutes.
  5. Remove from heat and drizzle with lemon juice.
  6. Place salad greens on a platter with cherry tomatoes and cubes of avocado.
  7. Garnish with roast macadamia nuts.
  8. Drizzle with Macadamia and Lime Infused oil.
