Apricot and Macadamia Slice


90 gram plain flour
25 gram butter
11/2 TB ground macadamia meal
1 cup soft brown sugar
11/2 TB icing sugar
¼ tsp vanilla essence
1 egg yolk


100 gram roasted macadamia nuts chopped
1 tsp vanilla essence
1 cup soft brown sugar
100 gram dried apricots
150 gram butter 50 gram chocolate chips


  1. In a food processor place flour, butter, macadamia meal and icing sugar, process until crumbly on pulse action.
  2. Add egg yolk, vanilla and enough cold water to make dough come together.
  3. Gather into a ball, cover and chill for 30 minutes.
  4. Line a 20 cm cake tray with baking paper.
  5. Roll out the dough to fit base and bake 180 degrees for 15 minutes, or until lightly browned. Leave to cool.


  1. Put sugar and butter in a pot and stir over low heat until butter has melted and sugar dissolved.
  2. Bring to the boil, reduce heat and simmer for 1 minute.
  3. Remove from heat and add vanilla, apricots, chocolate pieces and macadamias.
  4. Spread over pastry and bake 25 - 30 minutes or until bubbling.
  5. Leave to cool before cutting.

(Instead of apricots, other dried fruits can be used – pear, peach)
