Avocado and Macadamia Nut Muffins

Ingredients (makes 12)

1 avocado (mash100g for the muffins and reserve rest for the filling)
3 TB chopped macadamia nuts
2 cups flour
3 Tsp baking powder
½ tsp salt


¼ tsp chilli powder
1 beaten egg
1 TB sugar
50gram melted butter
1 cup milk


  1. Combine the dry ingredients.
  2. In another bowl, beat the egg, sugar melted butter, mix in avocado.
  3. Add the macadamia nuts to the avocado mixture, then the dry ingredient in batches alternatively with the milk.
  4. Blend together, do not overmix.
  5. Bake at 200C for 20 minutes.
  6. Serve hot, garnish with the remainder of the avocado  or serve with Brie and bacon filling.
