Self Crusting Quiche with Macadamia Dukkah


1 large onion chopped
2 cloves garlic
1 TB butter
4 eggs
1 cup milk
¾ cup self raising flour


2 cooked potatoes cubed
6 sundried tomatoes
1 cup drained cooked greens – asparagus, spinach, broccoli
1 cup grated cheese
¼ cup macadamia dukkah


  1. Melt the butter and cook the chopped onion and garlic until tender.
  2. Beat the eggs, salt and milk.
  3. Pour into a large bowl containing the sifted flour and stir until combined.
  4. In a quiche dish place the onion mix.
  5. Add the cubed potato and the greens. Add the egg mixture.
  6. Sprinkle cheese on top and garnish with sundried tomatoes and dukkah.
  7. Bake at 200 degrees for 20 – 30 minutes or until lightly browned and set in the centre.
